Saffron— derived from the stigma threads of the Crocus sativus flower— is one of the most valuable spices in the world, commonly selling for over $3,000 per kilogram.

Its distinct flavor, color, and aroma make it an extremely sought-after ingredient for culinary, cosmetic, and medicinal uses.

Production Problems

Despite its high demand, global saffron supplies have seen a notable decline in recent years; leading to large price spikes.

Saffron production is particularly challenging due to the crop's unique characteristics. The Crocus sativus plant thrives only in particular climates, and its flowers are highly delicate. The labor-intensive harvesting process requires that the saffron threads (stigmas) be handpicked during a brief blooming period.

Since the crop's per-plant yield is also inherently low—each flower produces just 2 to 4 saffron threads—approximately 170,000 flowers are required to produce a single kilogram of saffron.

These challenges are further compounded by the increasing impact of climate change. In 2023, severe weather in Iran—responsible for over 80% of the world's saffron supply—led to a staggering 50% drop in crop yields compared to the previous year. This sharp decline underscores the growing vulnerability of saffron cultivation to unpredictable environmental changes, highlighting the urgent need for sustainable and resilient production methods.

Our Solution: Lab-cultivated Saffron
